A tasty, healthy recipe for AIP/Paleo/Vegan Friendly Waffles (that happen to be shaped like a pot leaf)

I’m a big fan of using CBD (with some THC in it - because I find it works better) medicinally, and I’ve got a whole entire post coming soon about my multi-decade journey with this magical plant. That said, on recipe posts, I’m continuing on my promise to not bombard with a super long story that you’ll likely scroll through anyway. This post? It’s about making waffles. And these waffles happen to be shaped like a pot leaf, courtesy of my cousin’s company Waffleye ( I always love supporting family). I’ve never been a huge fan of infusing food, because I can’t guarantee what dosage I’m going to get, and getting rip-roaring stoned isn’t really a goal of mine these days. But properly dosing myself with CBD heavy tinctures or a perfectly micro-dosed Dosist pen? Sign me up.

Anyway - I collaborated with the Waffleye team on this stunning brunch (and while I’m not going to write a ton about it on this recipe post, I am going to show you pictures from our brunch, because it was magical, and we got our grandma to jump in and help out too!!). Waffles are something I’ve really missed since going AIP/Paleo, and I’ve been working on creating an AIP friendly waffle that I could actually eat. I think I’ve finally perfected my recipe to the point that I’m ready to share it so without further ado, here you go.

Jenna’s Super Tasty AIP Waffles

2 1/2 cups Otto’s Cassava Flour

1/2 cup Arrowroot Starch

2 Tbsp Baking soda

2 Tbsp Apple Cider Vinegar

2-4 Tbsp Maple Syrup, Honey, or sweetener of choice (not necessary, but tasty)

A few shakes of Pink Himalayan Salt to taste

Zest of 1 large piece of citrus (I love blood orange when in season, otherwise lemon, orange, grapefruit, etc will do - also not necessary but tasty)

2 tsp fresh grated ginger (not necessary, but tasty)

1/2 cup Olive, Coconut, or Avocado oil (for coconut oil, make sure it’s melted. I love to use either melted coconut oil or WeOlive Blood Orange Olive Oil when I’m being extra fancy)

2 cans full fat Coconut Milk (no Guar Gum if you’re AIP - and even Trader Joe’s is on the no Guar Gum bandwagon these days, thankfully)

1-2 tbsp vanilla extract (optional, omit if AIP)

Instructions:

Add all things into a food processor. Add in the Apple Cider Vinegar last. Mix well. Pour onto heated waffle iron. Make a waffle!

*This recipe makes 6 large waffles. It’s super easy to half the recipe and only make 3, which we do often in my house.

Serve with fresh berries, coconut butter, maple syrup, and a side of your favorite CBD!

Will this work with other flours? I welcome you to experiment! This is the recipe that works for me. I haven’t really had the best of luck making it as tasty with other flours/mixtures. If you figure out another way, please let me know!!
